Ingredients

  • Almond Flour – This recipe’s foundation is almond flour. Because it gives a smoother texture than coconut flour, it’s our favorite low carb flour to use in dessert recipes. We like to use blanched almond flour that has been finely milled.
  • Butter — For extra smoothness and fat content (after all, we’re producing fat bombs).

  • Sugar-Free Chocolate Chips — A must-have ingredient in every low-carb cookie dough. Since the beginning of our blog, we’ve used Lily’s Sugar Free Chocolate Chips, and they’re still our favorite.
  • Erythritol is our recommended sugar alternative in keto dessert recipes.
  • Stevia – We use this in conjunction with erythritol to achieve the correct level of sweetness in our desserts.
  • Vanilla Extract is what I like to refer to as “the salt of desserts.” This recipe is brought together by a dab of vanilla essence.

Make use of a lot of fat

This is crucial since, after all, we’re manufacturing cookie dough fat bombs. We’re using a combination of butter and cream cheese in this recipe. If you want to, you may use coconut oil instead of butter in most keto recipes, but I wouldn’t recommend it for these fat bombs. At room temperature, the butter is more stable, resulting in a superior consistency in this keto cookie dough recipe.

Chocolate Chips that are Keto-Friendly

There are a lot of keto-friendly chocolate chip options these days, but Lily’s chocolate chips are the one we always use. It’s critical to use sweetened chocolate chips rather than unsweetened chocolate chips. If you can only locate bakers chocolate in your area, increase the amount of sugar in the dough to compensate.

Use both erythritol and stevia.

This mixture is crucial for achieving a balanced sweetness with no unpleasant aftertaste. Because the rest of the ingredients provide some mild sweetness, this recipe does not require a lot of sweetener.

Stevia looks a lot like liquid monk fruit. You can substitute monk fruit for stevia in this recipe if you wish.

You can use powdered erythritol instead of granular erythritol if you wish to avoid the gritty texture of granular erythritol (although I do not find it to be off-putting in this recipe).

Bring the ingredients to room temperature before using.

Allowing the ingredients to come to room temperature lets them to fully combine without clumping. This is especially true with no-bake recipes, as the cooking process is what eliminates the majority of clumpy dough concerns.

This isn’t the most important tip, but don’t overlook this handy little gadget. I used to think having a device designed for scooping cookies was a waste of money, but it comes in handy pretty often. It’s well worth the money at less than $15. We prefer to use a cookie scoop to scoop the complete keto cookie dough recipe into small cookie dough bits.

What are the finest keto chocolate chips?

Over the last few years, there have been an increasing number of keto-friendly chocolate chip choices available. The majority of these are excellent choices, and you should be fine with whichever keto chocolate chips you have on hand. Lily’s Chocolate Chips are a staple in our house. They’ve been around for a long time and are a well-known name in the keto community.

The removal of eggs is the most important component of edible cookie dough. Raw eggs are a source of concern for many individuals. Because this dish will not be baked, eggs are not required to keep the dough together.

This recipe is excellent with almond flour, but if you prefer coconut flour or want to make it nut-free, try this instead. Remove 1 tablespoon of almond flour and replace it with 1 tablespoon coconut flour. Once that’s done, add little amounts of coconut flour at a time until the dough can be molded into balls.

In place of the almond flour, you’ll need 2-3 teaspoons of coconut flour.

How should these fat bombs be stored?

I prefer to keep all of my fat bombs in the freezer. This will greatly extend the life of your product. It also offers you the option of eating them cold (which is what I like) or letting them to defrost on the counter before eating them. You’ll want to keep these in the fridge at the very least. They’ll last for two to three weeks.
