You want ice cream for dessert? You have to make our keto mint ice cream!
The weather may be getting cold, but I can eat ice cream all year round! I love festive mint ice cream at this time of year. That’s why I created a low-carb ice cream recipe that you can also enjoy as part of a keto diet. A delicious, guilt-free ice cream treat? Yes, please.
The mint chocolate chips make this keto ice cream the best!
Just in time for the holidays, ChocZero has launched a collection of chocolates and syrups with peppermint to highlight the classic flavors of the season. Like other ChocZero products, this festive range of keto Christmas treats is sweetened with monk fruit, so you can enjoy all the seasonal treats without compromising your keto lifestyle.
The secret is in the sauce….
This recipe uses our keto condensed coconut milk recipe. Yes, that’s the secret to making the ice cream so rich and creamy. Standard canned condensed milk has 90 calories, 15g carbs and 15g sugar per serving, but our keto version has ZERO net carbs. WOOOO!
Femur: Because this keto mint ice cream has a soft consistency, I suggest transferring it to an airtight container and placing it in the freezer for at least 4 hours or overnight if you want it to resemble hard ice cream.

How to make keto condensed milk:
Put the coconut milk and butter in a medium sauce pan. Bring to a boil over medium heat for 10 minutes, stirring frequently to prevent sticking. Turn the heat down low and add the Swerve or Lakanto sweetener powder and stir until dissolved. Cook over a low heat for 20 minutes, stirring the milk from time to time. When the milk has thickened, pour it into a glass or container and let it cool.
Get the ice cream ready:
In a medium bowl, with a hand mixer on low speed or while beating, mix the keto condensed milk, double cream, golden keto sweetener, keto sweetener powder, peppermint extract and vanilla extract until the sugar is dissolved.
Cover and refrigerate for at least 2 hours or overnight.
Take the ice cream base out of the fridge. Follow the freezer manufacturer’s instructions to start the freezing process. Knead until the dough thickens (about 30-35 minutes). Add the chopped ChocZero zest to the ice cream and stir for 2 minutes, just enough to blend the zest into the ice cream.
Ice cream machines generally produce a softer consistency. If you want a thicker consistency, I recommend transferring the ice cream to an airtight container and putting it in the freezer for about 4 hours.
Serve with additional pieces of ChocZero bark or ketone-friendly chocolate syrup. Have fun!

It’s like Christmas on a spoon!
You’ll find it hard to stop at just one serving of this delicious, keto-friendly dessert! Of course, the taste makes me feel festive, like I’m eating a regular ice cream. My boys didn’t even know it was keto and my husband ate two bowls. I think I’ll have to make a bigger batch next time!
Speaking of ice cream…
I have to be honest, I’m obsessed with my Cuisinart ice cream maker! He makes the most amazing batches of keto ice cream. This Cuisinart can make up to 2 liters of ice cream, frozen yogurt, gelato or sorbet at once in about 30 minutes. The other vending machines I tried seemed to take forever, and who wants to wait long when you have a sweet tooth?

One of my team members, Jenna, tested this recipe for me and this is what she said:
Thanks for giving me an excuse to have my ice cream maker! I haven’t used it in so long! It was delicious, my kids ate everything and had no idea it was keto. The most amazing thing for me was the keto milk base. It’s great that it’s made with coconut milk, but it doesn’t taste the same once it’s on ice! Thanks to ChocZero mint bark, this keto dessert shined!
