This recipe uses our keto condensed coconut milk recipe. Yes, that’s the secret to making the ice cream so rich and creamy. Standard canned condensed milk has 90 calories, 15g carbs and 15g sugar per serving, but our keto version has ZERO net carbs. WOOOO!

Femur: Because this keto mint ice cream has a soft consistency, I suggest transferring it to an airtight container and placing it in the freezer for at least 4 hours or overnight if you want it to resemble hard ice cream.

How to make keto condensed milk:

Put the coconut milk and butter in a medium sauce pan. Bring to a boil over medium heat for 10 minutes, stirring frequently to prevent sticking. Turn the heat down low and add the Swerve or Lakanto sweetener powder and stir until dissolved. Cook over a low heat for 20 minutes, stirring the milk from time to time. When the milk has thickened, pour it into a glass or container and let it cool.

Get the ice cream ready:

In a medium bowl, with a hand mixer on low speed or while beating, mix the keto condensed milk, double cream, golden keto sweetener, keto sweetener powder, peppermint extract and vanilla extract until the sugar is dissolved.

Cover and refrigerate for at least 2 hours or overnight.

Take the ice cream base out of the fridge. Follow the freezer manufacturer’s instructions to start the freezing process. Knead until the dough thickens (about 30-35 minutes). Add the chopped ChocZero zest to the ice cream and stir for 2 minutes, just enough to blend the zest into the ice cream.

Ice cream machines generally produce a softer consistency. If you want a thicker consistency, I recommend transferring the ice cream to an airtight container and putting it in the freezer for about 4 hours.

Serve with additional pieces of ChocZero bark or ketone-friendly chocolate syrup. Have fun!
