If you are not familiar with the ketogenic diet, or Keto for short, it is a low-carb, high-fat diet that is being touted as a new way of eating. The diet is known for being high in fat and low in carbs.
The ketogenic diet is based on the principle that in order to produce energy your body must use fat rather than carbohydrates (i.e. sugars) as a fuel. When carbs are burned for energy, the digestive system converts them into glucose (a simple carbohydrate), which is then converted into glycogen (a simple sugar) for storage, which is then broken down into fatty acids and glycerol. When you’re in ketosis, your body can use fats for energy instead of carbs, which is why the ketogenic diet is so effective for weight loss.
I highly recommend it to all milkshake and smoothie lovers: This strawberry keto smoothie is the bomb!
I love ice cream, I think it’s my favorite dessert, but most ice cream is not keto friendly (although there are a few we like!) I’m also picky about my milkshakes: not too sweet, not too runny, not too thick, creamy but not too rich….. You have the idea.
I wasn’t sure if Southern Keto’s strawberry milkshake recipe would make for a creamy, sweet, bright berry-flavored drink, but it worked beautifully! Best of all, the keto milkshake was very simple, quick and easy to make, and yet the recipe was very sweet.

This milkshake is very creamy and has no layers like my ice cream and milkshakes. It also has optimal sweetness, and 16 ounces is all you need (even if you really want to keep drinking it!).
I ended up trying fresh and frozen strawberries to see which I liked better, and I also tried with and without xanthan gum. (I’ve never used it in a recipe before, so I was curious about the difference).
And if you have a good powerful blender (like this Ninja blender), it purees the mixture in less than a minute. It’s the dessert version of a quick dinner: throw everything in the blender, crank it up, and boom! Here’s your dessert.
Strawberry cake ingredients:
- 4 medium-sized salted or roasted beef bears, plus 1 fresh beef to garnish, if desired
- 3/4 cup unsweetened Mandelmilch
- 1/4 cup whipped cream
- 1 1/2 Teelöffel granuliertes Erythritol
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon xanthan gum (to thicken)
- Whipped cream for the topping (optional)
Strawberry pie method:
Place all ingredients in blender and blend on high speed until smooth and creamy, about 1 minute. Pour into a glass and serve immediately. Garnish with whipped cream and strawberries, if desired.
What about xanthan gum?
The recipe book says not to add xanthan gum if you don’t have it. So I played around with different amounts of this product (and without doing it at all) to see what difference it made. The use of xanthan gum gives the milkshake a very smooth, almost foamy texture, but it is still easy to drink through a straw!
If you don’t add it, the milkshake will be slightly thicker, but you can mix it longer to get a thick whipped cream. I ended up using half the recommended amount of xanthan gum (1/8 teaspoon instead of 1/4) and mixing longer.
I also wondered how hard it would be to find xanthan gum in the grocery store, but Walmart, Amazon, and even my local grocery stores have it now!
Swerve sweetener adds just enough sweetness to already tart berries. I was also surprised that the recipe used the granular variety, as I wasn’t sure if it would completely dissolve in the cold liquid. That’s for sure! And 1 1/2 teaspoons is the perfect amount for a light, sweet dessert. If you want it sweeter, add more Swerve!
If the southern keto recipe is indeed tasty, there’s no reason why you can’t use it as a base and tweak it to your liking. My whole family loved this recipe, but each of us had a different variation – less or more sweetener, xanthan gum, or strawberries to get slightly different flavors and textures. All in all, we really enjoyed it!
Even my 14 year old brother (who is very skeptical of new products) tried the second serving! It’s delicious, not too sweet and has a great texture. I think it would also be delicious with cocoa powder or a mixture of frozen berries.
